Classic Atar (Lebanese Sugar Syrup)
Ingredients
• 2 cups caster sugar
• 1 cup water
• Juice of ½ lemon
• A sip of rose water
• A sip of orange blossom water
Method
1. In a medium saucepan, combine the sugar and water.
2. Place over medium heat and stir gently until the sugar dissolves , after that, avoid stirring.
3. Bring the mixture to a boil, then lower the heat and let it simmer steadily for about 20 minutes.
4. Add the lemon juice and continue simmering until the syrup thickens slightly.
5. Turn off the heat and stir in the rose water and orange blossom water.
6. Let it cool completely before using. It should be glossy, lightly thickened, and beautifully aromatic.
Blueberry ‑Infused Ater
Ingredients
• 2 cups caster sugar
• 1 cup water
• a small handful fresh or frozen blueberries or raspberries or strawberries
• Juice of ½ lemon
• A sip of rose water
• A sip of orange blossom water
Method
1. Combine the sugar, water, and berries in a saucepan.
2. Heat gently until the sugar dissolves, then bring to a boil.
3. Lower the heat and let it reduce for about 20 minutes. Test with a spoon if it’s sticky when slightly cooler
